When we spent the day with cook and food writer Melissa Hemsley at her East London home, she laid on an impressive spread for lunch outside on her sunny terrace. Salads, a raspberry and vodka cocktail, grilled prawns and a delicious avocado dip quickly disappeared when we all sat down to eat. Here’s how to make that dip and for more inspiration for dishes that are tasty, healthy and quick to make (not a single one takes longer than 30 minutes), read her latest book, Eat Happy.

Ingredients

1 medium ripe avocado
4 tbs full fat yoghurt (add coconut yoghurt or 1tbs tahini and 3 tbs of water if vegan)
2 tbs water, adjust to the thickness you like
Juice of 1 juicy lime
1 small clove of garlic
1 small handful of coriander
Chopped jalapeno / fresh chilli or chilli flakes, adjust to your taste
Good pinch of sea salt and pepper, to taste

Method

1. Blitz all the ingredients together in a blender until smooth then taste for seasoning.

2. Top with a swirl of extra virgin olive oil and some extra herbs.

3. Serve with fresh crudités like red and yellow chicory leaves, radishes, cucumber and fennel slices.
