Melissa Hemsley served up a delicious courgette ribbon and chive salad as one of the side dishes at lunch when we visited her East London home recently. Trust us, it tastes as good as it looks and is simple and quick to make. Try it for yourself.

Ingredients (serves 4)

2 large courgettes, look out for the yellow ones that are becoming more readily available
1 small handful of any herbs like dill / basil / mint / marjoram or pea shoots
1 small handful of chive flowers or edible flowers (really easy to grow chives on our windowsill)

Juice ½ lemon or 1 and a 1/2 tablespoons of apple cider vinegar

3 tablespoons of extra virgin olive oil

Sea salt and black pepper

Method

1. 'Use a peeler to peel the courgettes into wide thin ribbons (press down harder than if you were peeling a potato.)

2. Arrange on a plate or platter (snip the ribbons if the courgettes are particularly long) and dress just before serving (or they will get soggy) and sprinkle over herbs and chive flowers.'
