Now the clocks have gone back and the evenings are longer and lighter, it's the ideal time to sit outside with a post-work cocktail. And with the long weekend drawing nearer, why not try something new? At 76 Dean Street, bartender Gianluca showed us how to make a ‘Carrot Fix’ which celebrates the start of spring with carrot juice and ginger syrup. Refreshing with a touch of smoke and woodiness from a spritz of Dewar's whisky over the finished drink, this blend of contrasting elements work surprisingly well together. The Easter Bunny would definitely approve...



'Carrot Fix'


5ml ginger syrup
25ml lemon juice
full measure (double shot) Aperol
50ml agave syrup Devos
20ml carrot juice


Cocktail shaker
Barwell rocks glass to serve


Step 1

Fill glass with crushed ice to chill (or alternatively chill the glass in the freezer.)

Step 2

Starting with the cheapest ingredients in case you make a mistake and have to throw it away, pour them into a cocktail shaker. Shake with lots of ice.

Step 3

Empty glass of ice.

Spray inside of glass with Laphroaig single malt scotch whisky (very peaty and smoky) in an atomiser.

Step 4

Fill glass with fresh (large) ice cubes.

Single strain over ice cubes. Garnish with a sprig of parsley and finish with two more sprays of the Laphroaig.
