How to make Soho House Hong Kong's Eastern Standard
A Soho House twist on a classic South Side cocktail, the refreshing Eastern Standard features cucumber and mint, and works with almost any spirit (though we prefer vodka or gin)
Ingredients
3 cucumber slices, muddled
3 mint leaves, hand-clapped
2oz / 50ml vodka or gin
1oz / 25ml fresh lime juice
0.75oz / 20ml simple syrup
Garnish
A slice of cucumber rubbed along the rim of the glass and placed in the cocktail

Method
1. Muddle the cucumber slices in a shaker tin, then add the mint once you have hand-clapped it to release the oils.
2. Add the rest of the ingredients to the shaker with ice. Shake and strain into a cocktail glass.
3. To garnish, rub a slice of cucumber around the rim of the glass before placing it in the cocktail.
